102613 Date Day Saturday - Antiques & Enchiladas

Kicked back fun day!

A rather imposing greeter, don't you think? You get a good side view of his helmet in the window.

They have the best decorated booths I think I've ever seen!

Thought this idea would be fun on a scrapbook page with Project Life cards.

Just loved this whole little vignette nestled in the wire basket. Giant glitter leaf? *swoon*

Thought this would be great made out of yardsticks for Christmas!

I remember $.15 Cokes in glass bottles... sigh

Quick stop for chicken treats...

Brought home the second of our latest collection.

And a handy scoop for chicken feed - love decorative AND useful things.

Now to make a double batch of enchiladas - one for an international dish
for our Missions Conference potluck tomorrow and one for dunch for us today!

Single batch recipe
Filling:1 pound of cooked ground beef
We have stocked our freezer with Amish beef - so delicious!

 1/2 medium onion, diced

1/2 pound grated sharp cheddar - reserve enough to garnish top

1/2 can of ripe olives, diced
 Mix all together in large bowl. Set aside.

Sauce: 
 Dissolve 3 cubes of beef bouillon in 3 cups boiling water.

In large saucepan whisk 1/3 cup each flour & corn oil. Heat until bubbly to make a roux. 
Turn down heat & gradually add the beef broth, whisking rapidly to make a thin sauce.

Add 3 Tablespoons each ketchup & chili powder, 1 Tablespoon cumin powder,
1 teaspoon garlic powder & worcestershire sauce, 1/2 teaspoon Kitchen Bouquet, salt & pepper to taste.  Simmer for a few minutes to thicken & allow the spices to incorporate.

You will be softening your corn tortillas before filling by briefly cooking them in corn oil.

Here's the assembly line:  soften tortillas in corn oil in skillet, dip in sauce & lay on a dinner 
plate (they will be HOT - a lot of "oww!"ing & giggling at this point) add a handful of filling 
to nearest edge & roll up, place in 9x13" cake pan, tucking the last few in sideways. 
I can usually get 12-14 if I pace myself with the filling.

Cover with remaining sauce & grated cheese. Bake at 350* for 20 minutes. 
Makes great leftovers and can be frozen - I like to do single servings of 2 enchiladas per freezer bag.

101213 Date Day Saturday - Midland

Out hunting this morning for some scrap goodies! 
Since my local scrapbook store closed I haven't had a hands on hunt for new stash, 
and with the new CHA releases I am hyping to get my hands on scrappy goodness!
So we headed north to Midland...

This made us smile on the way, and as we are Smiths, we felt a little proprietary about it!


Little did I know what a treat I was in for at Scrapbooks Galore & More!

Each time I look at these photos I see more stuff I want, lol!
The cute displays continue throughout the store.

Must return soon for a full inspection, as my time was somewhat limited today. 
A quick stop at a little orchard for apples, cider & donuts on the way home.


So look what I got!


$3.00!!! How great will this be to tell tales of the grands adventures! Aaargh


The Monopoly pieces are his & hers - race car for DH & thimble for me.
Not sure what I will do with the flashbulb but HAD to have it.


 Anyone else remember these Cracker Jack prizes? I have a green monkey who needed some friends.
The film canister will make a great mini-book...


Adored the tiny pink shoes & sweet baby buttons...
The Monopoly cards were chosen with specific pages in mind.


And this goes in the toy chest for the grands - Bampa will have to make a box to mount it in.


Can't reveal the scrap goodies as they are going to gifts, but I got some YUMMY Happy Mail this week. Thanks, Lynnie <3



Home to do a little housework/laundry, then off to dinner to celebrate Chuck's birthday at Red Robin.
How did he get away without me snapping a birthday photo?


Well at least there's proof that we enjoyed some birthday pie!

100813 CKC Counterfeit Tutorials

Lots of yummy product this month, as usual, in the inspiration kit from Cocoa Daisy!
Let's start with some paper...




My Mind's Eye Sky's the Limits "Balloon Parade"

My version:
Super easy! I'll bet you have a balloon stamp somewhere in your stash!

 Echo Park Beautiful Life "Quatrefoil"

I cut out the shapes from this vintage Basic Gray paper & backed it with other patterned papers.


Cocoa Daisy's own Little Triangles background stamp

I used the pink patterned paper to guide my cut-outs. Now I have the perfect little triangles mask!

Counterfeit Basic Gray Capture die cut pack filmstrip
This is a recent purchase & I am hoping to use it with patterned paper - excited!

Counterfeit Fancy Pants cork hearts & stars
I actually have some thin cork veneer sheets but they don't fit into the punches very well, so I simply used cork paper! Add a pop dot & we have instant dimension :~)

The Art Project kit included some Maya Road kraft circle embellishments, top left.

Punch, stamp (I cut out the circle from this stamp), and done.
The Color Box white ink is so nice & juicy - great for good coverage.
This month is my birthday (10-30) & I'll be 56!

More Cocoa Daisy custom stamps.
I have a favorite coffee mug that I keep on my scrap desk because it makes PERFECT stain circles!

None of my forgeries this month was particularly innovative, but it just goes to show you that you don't have to reinvent the wheel to be able to put together elements that are trendy & new!
